Why doesn't my Bluetooth MIDI keyboard show up in my iPhone's Bluetooth settings?
Nothing is broken: iOS hides Bluetooth MIDI devices from Settings › Bluetooth on purpose. BLE MIDI pairing happens inside a music app, not in Settings.
